The Local Pop-Up and Food Fests have served as a trial ground for many new cooks, chefs and even just food enthusiasts who are expanding Raipur?s palate with their new delicacies. Be it food that the people of the city have wanted for ages or things they have never even heard of, The Local has got you covered!
1.Ramen
Avid ramen enthusiast, Sourabh Tiwari, brought the novel concept of authentic Japanese ramen to Raipur through his stall, Raman Noodle ki Dukaan?. Complete with its well-seasoned broth, paprika paneer, black bean mushrooms, lotus stem chips and hand pulled chicken, these kind of noodles were a first to many who had just had Maggi before.
2. Bao
This fluffy, pillowy bun was first introduced by J?Adore Patisserie?s Amisha Singh as a new item in their menu for the Pop-Up. A bao is a steamed bun that folds over its filling. It?s often compared to Asian-style dumplings, but it differs in its bread-like consistency and slightly sweeter taste. This offered an alternative to the widely beloved 'momos' in the city.
3. Burnt Basque Cheesecake
Raipur?s favorite bakery whipped up something special, a rich, gooey dessert, even better than their classic New York cheesecake. Originating in Spain, this dessert resembles a crème brûlée with its light, creamy texture and caramelized crust. It is actually an intentionally burnt cheesecake, hence the name.
4. Molecular Gastronomy
Twinkle Goel brought a new style of cooking, rooted in Chemistry, all the way from Bhilai to Raipur?s Food Fest in 2022. She introduced a chaat platter with chutney caviar, pani-puri water spheres, lemon and hing foam and more as a part of Molecular Gastronomy. Molecular gastronomy is a movement that incorporates science and new techniques in the preparation, transformation and artistic preparation of food to create unexpected dishes.
5. Crêpes
The Yummy Life?s Shanul Bothra cooked up a new kind of pancakes, called Crêpes, for R. Not to be confused with dosa either, Crêpes are a very thin type of pancake that can either be sweet or savory. They are often served with a wide variety of fillings such as cheese, fruit, vegetables, meats, and a variety of spreads.
